Polymeric Complex of Procyanidin and PVP-VA64 for Taste Masking of Grape Seed Extract

Polyvinylpyrrolidone copolymer (PVP-VA64)was selected as the carrier macromolecular material to form a novel polymeric complex with proanthocyanidin (pAC), the most abundant active ingredients in the grape seed extract, in order to mask the unpleasant sour and astringent taste of the extract and the preparations containing it, and the chewable tablets containing grape seed extract were prepared.DSC and FTIR methods were used to explore any interactions between PVP-VA64 and procyanidin to verify the complexation mechanism.Optimum taste masking effect was obtained via the complexation of procyanidin with PVP-VA64.However, further studies are still need to be carried out to determined in-depth taste-masking mechanism.
