Survey of fatty acids composition of pasteurized milk and UHT milk in China market

Introduction Milk fat acids have perceived great importance, for its indispensable influence on human health.Besides physiological status of dairy cows, milk FA profile were considered to be affected by dietary nutrition dramatically(Walker et al., 2004).According to annual accumulated temperature and precipitation,China is divided into subtropical monsoon, temperate monsoon, temperate continental, tropic monsoon, and Plateau mountain area.15, 50, and 30% of the total dairy cows were lived in the first three major areas(Li,2016).More than 8 million cows produced almost 31 million tones milk in 2015.Meanwhile, more and more dried and fluid milk were imported from New Zealand, Australia, and European Union(Li, 2016).However, little report was found to investigate the retailed milk FA profile in China, especially from nutrient influence and health estimate.The objective of this study was to investigate the FA composition of pasteurized and UHT milk, and explore the potential effects of climate and months on retailed milk FA.
