A comparative study of fatty acid profiles in raw milk from five species
Introduction Many bio-activities have been found in fatty acidswhich have an important influence on human health(German, 1999).According to the saturation of alkyl, fatty acids can be classified as saturated fatty acids (SFAs) and unsaturated fatty acids (UFAs).The UFAscan be divided into two categories, including the monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs), based on the number of unsaturated carbon bonds.Plentiful unsaturated fatty acidsin raw milk have a which significantly influence on human health.The linoleic acid and linolenic acid which belong to the essential fatty acidshave an important effect on the functions of brain, retina, skin and the kidney(Mensink et al., 2003).Conjugated linoleic acid(CLA) has various physiological functions such as reducing blood fats, restraining the propagation of cancer cells as well as improving human immunity.The present study aimed to find the differences ofthe fatty acids in different species of ruminant milk and investigate the effect of fatty acidson human health,which will offer some suggestions for people to drink milk properly.
