Study on the thixotropy of sericin

  Sericin, has been proved to be a nature water soluble globular protein, consists of 18 kinds of amino acid.This paper gives a brief introduction to thixotropy property of the sericin,and describes the Critical gel concentration of sericin solutions prepared in various ways.To further study the thixotropy, we investigated the viscosity change of sericin sol-gel system at different temperatures.The result indicated that it takes the minimum duration to finish gelation at 25 ℃,however, the fastest of the recovered is the sol-gel system at 37℃.The mechanism of gelation,regaltion and thixotropy of sericin has been discussed.Despite the fact that sericin is known for its culinary and medical properties all the time, what this paper describes will provide a new visual angle for the application of sericin through thixotropy, and is of great significance to enlarge its applicable area.Although a number of tests have given satisfactory results, additional investigations to provide further justification and verification are required.
