Biotransformation and Biological Activity of Green Tea Extract Fermented by Aspergillus niger

The consumption of pu-erh tea has been increasing rapidly in recent years.Pu-erh tea is considered to be much more beneficial to human health than other kinds of tea.Aspergillus niger is the preponderant fungus in pu-erh tea fermentation process.In this study, Aspergillus niger which was isolated from Pu-erh tea, was used to ferment the water extract of pu-erh crude tea.The aim of the research was to study the antioxidation of green tea fermention liquid with Aspergillus niger and effect of the fermentation extracts on the activity of digestive enzyme.Results showed that proper fermentation by Aspergillus niger could enhance the antioxidant activity of green tea extract.Fermentation extract F-1 and F-4 had stronger inhibition on lipase.F-5 could effectively inhibit the activity of amylase and glucosidase.
