Purification and Characterization of A Novel Laccase from Aspergillus niger for the Oxidation of (-)-Epigallocatechin Gallate

Aspergillus niger is the dominating microorganism during the pile-fermentation of Pu-erh tea (Lv et al.2013).It secretes a variety of enzymes, including polyphenol oxidases, proteases, pectinases, cellulases, xylanases, and other hemicellulase, and plays an important role in improving the taste of the tea by decomposing proteins or lipids and producing unique flavors (Abe et al.2008).
