Study on Fatty Acids and Volatile Flavor Compounds of Yak Meat

  Fatty acid composition and the volatile flavor compounds of Datong yak calf meat and adult yak meat were identified by gas chromatography-mass spectrometry (GC-MS).The classification of fatty acid composition and the volatile flavor compounds isolated in an analytic system were studied.The results showed that the content of saturated fatty acid (SFA) in fatty acid composition of yak calf meat reached 53.54%, and the relative content was extremely lower than that in adult yak meat (P < 0.01).The relative contents of monounsaturated fatty acid (MUFA) and polyunsaturated fatty acid (PUFA) of yak calf meat were respectively 32.38% and 11.59%, extremely higher than those of adult yak meat (P < 0.01).The ratios of polyunsaturated / saturated fatty acid (P ∶ S) and n-6:n-3 of yak calf meat were respectively 0.22 and 0.98, extremely higher than those of adult yak meat (P < 0.01).In addition, the ratio of P : S was two times of that in adult yak meat.On the other side, there were 114 kinds of volatile flavor compounds in yak calf meat and 125 kinds of volatile flavor compounds in adult yak meat.Both in yak calf meat and adult yak meat, there were 9 kinds of compounds played a major role on flavor.And in yak calf meat, the relative content of 24 kinds of volatile flavor compounds were more than 1% compared with 20 kinds of which in adult yak meat.In short, adult yak meat had more varieties and relative contents of volatile flavor compounds than yak calf meat, and yak calf meat contained lower relative content of SFA and higher relative content of MUFA and PUFA.
