Quality on Physical Base Index of Different Part of Meat Measured at Slaughter in Male Calf of Maiwa Yak
In this study, we collected three parts of meat samples including supraspinatus muscle (LJT), longissimus dorsi (WJ) and semitendinosus muscle (XHGT) respectively at slaughter in order to investigate the meat quality of different part of male calf of Maiwa yaks at the age of 6 and 18 months.The pH, chromatic aberration, rate of cooked meat and shear force were valued.The results showed that the pH value of those three part of meat have no difference.The L*, a *, b *, C, H value of chromatic aberration have no significant difference within the same part of muscle (P > 0.05), but difference parts of L *, a *, b *, C, H value have differences within same age.Brightness value L *, yellow value b * and toning angle H value is the largest in semitendinosus muscle, while red value a * and chroma value is the largest in supraspinatus muscle.The rate of cooked meat of semitendinosus muscle is the highest and the rate of cooked meat of supraspinatus muscle in 18 months age is significantly higher than that in 6 months age (P < 0.05), but in longissimus dors and semitendinosus muscle at 18 months age was small than that of 6 months age (P > 0.05).The shear force of longissimus dors muscle at 18 months age is significantly higher than that in 6 months age (P < 0.05), while the shear force of supraspinatus muscle and semitendinosus muscle at 18 months age higher than that in 6 months age (P >0.05).The color of semitendinosus muscle and supraspinatus muscle is lighter and bright in male calf of Maiwa yak.Semitendinosus muscle has a good processing performance.Meats tenderness in 6 months age is better than that in 18 months age, which is helpful to develop the fine products.
