Performance of Ozone and its Effect on the Chemical Composition in the Presence of Substance of Citrus Fruits
Ozone,one of the most powerful oxidant,is a potent agent in disinfection,sterilization of food contact surface or water treatment,elimination of odors,taste and color,and degradation of pesticides,inorganic and organic compounds.In this paper,the performance of ozone in four different aqueous solutions had been studied,which included 1% sucrose,1% citric acid,1% pectin (from citrus fruits) and 1% orange juice.The results showed that the time reaching to the point of saturation of ozone in different aqueous solutions were different,that were 35 min for 1% sucrose,10 min for 1% citric acid,45 min for 1% pectin and 20 min for 1% orange juice.The saturation concentrations of ozone in four different aqueous solutions were also different.It were 11.83±0.41 mg/L in 1% sucrose,14.28±0.51 mg/L in 1% citrus acid,16.08±0.34 mg/L in 1% pectin and 5.47 ±0.07 mg/L in 1% orange juice,respectively.The paper studied the ozone effect on the chemical composition in aqueous solution at the same time.The results suggested that different duration of ventilation could lead to variation of chemical composition in aqueous solutions.The concentration of 1% sucrose,1% citrus acid decreased during ozonation,while the concentration of 1% pectin remained basically unchanged,and the chemical oxygen demand value fluctuated up and down continuously with time in 1% orange juice.
