Implementation of the Edible Mushroom Pleurotus spp.as A Nutritional Alternative for Children and Seniors in Communal Lunch Rooms
Selected communities of the coffee growing region of Colombia,in an effort to address their high levels of unemployment,malnutrition and poverty,undertook a project under which head-of-household mothers cultivated the edible mushroom Pleurotus spp.in rural and marginal areas of capital cities.The initiative had the support of the ZERI Foundation,the Chamber of Commerce of the city of Manizales and used technology developed by CENICAFE.The issue of marketing represented the main obstacle to the success of the business plan.In contrast to the people of other countries such as Chile,Argentina,Peru and Brazil,Colombians do not have a strong tradition of using mushrooms in their nutritional habits.This initiative tried to fmd ways of implementing in community kitchens and lunch rooms several mushroom-based recipes that would be accepted by the different target audiences of vulnerable children and adults.The project made tests in 22 organizations that distribute food to more than 25 thousand people in different cities in Colombia.The project included donating 10 metric tons of fresh and dehydrated mushrooms which were then processed using different recipes.Among the recipes that were most successful were meatballs with mushrooms (96% acceptance) and oyster mushroom soup (82% acceptance).The Protein content of the raw meat was 56,19% on dry basis and 40,94% for raw meatballs with mushrooms.The public kitchens and lunch rooms included these recipes as part of protein-enhancing foodstuffs,given that protein is expensive and difficult to substitute.
