Mineral Content of Fruit Bodies of Culinary-Medicinal Boletales Mushrooms
The Boletales includes well known edible mushrooms that form a part of the traditional diet for Slavic population.The chemical composition and high levels of biologically active substances determine not only their high nutritive value but also medicinal properties.The paper presents results obtained with using inductively coupled mass-spectrometry on Fe,Cu,Zn,Mn,Mo,Se,Ag,Cd,Hg,Sr,As content in fruiting bodies of seven culinary-medicinal mushroom species ofBoletales Boletus badius (Fr.) Fr.,B.chrysenteron Bull.,B.edulis Bull.:Fr.,B.luridus Schaeff.,Leccinum aurantiacum (Bull.) Gray,L.scabrum (Bull.) Gray and Suillus luteus (L.)Russel.Samples were collected at the territory of Kiev,Zhytomir and Chemigiv regions of Ukraine.The analysis conducted has shown that fruit bodies contained high levels of physiologically important,essential metals-Fe,Zn,Cu,Mn.Other elements were found in smaller quantities,while Sr was not identified in some of mushroom samples.The average descending sequence for analyzed Boletales species looks as follows:Zn>Fe>Cu>Mn>Se>Mo>Ag>Cd>Sr>Hg>As.It was shown that Boletales mushrooms are collective sorbents of Fe,Cu,Zn and Mn,and selective sorbents of Mo and Se.The accumulation of Se,Ag and Hg by B.edulis and B.luridus is species-specific.
