Study on the Mechanism and Changes of Substance Content in the Matrix during the Life Cycles of Hericium erinaceus

  To study the variation of the content of substance in the different positions of matrix during the life cycle of Hericium erinaceus,and researched its mechanisms by probing into the change rules of H.erinaceus extracellular enzyme activity in the matrix.The H.erinaceus adopted bag cultivation,its growth period was divided into ten stages and splided the matrix in 4 equal portions.Studied the regularity for variation of the content of total sugar,reducing sugar,soluble protein and free amino acids at different parts of the matrix,and studied the regularity for variation of laccase,cellulase (carboxymethyl cellulase and hemicellulase) and acidic protease activity at different parts of the matrix in order to explore the mechanism for changing of composition.Results During the growth period of H.erinaceus,content of total sugar decreased at different parts of the matrix,and content of reducing sugar decreased before the growth of primordium,then increased after growth of primordium,and reached the the highest value.Content of water-soluble proteins showed increasing trend at different parts of the matrix,and reached the the highest value in the stage 9,the content of amino acid was reducing during the life cycle of H.erinaceus.The contend of biomass increased during the life cycle of H.erinaceus.The regularity for variation of activity of laccase lowest activity was appeared after the harvest.The activity ofcellulase enzyme and hemicellulase was totality increased and reached the the highest value in the stage 9.Acid protease enzyme decreased in the growth of H.erinaceus.In the life cycles of H.erinaceus,substance content in different parts of matrix presented different change trends with the growth and development of it; H.erinaceus extracellular enzyme activity could affect the content of substance in the matrix,namely there was a certain correlation between the H.erinaceus extracellular enzyme activity in matrix and material content.
