Tocopherols and Tocotrienols and Their Relationship to Protein Subunits and Quality Characteristics in Some South African Wheat Cultivars
Tocopherols and tocotrienols are collectively called tocols,and their most important chemical property is their antioxidant activity.Cereal grains are moderate sources of tocols,but are important,as cereals are consumed in large quantities by humans.In South Africa tocols have not been measured in the past,and no data on this is available.The aim of this study was therefore to evaluate South African cultivars for tocols and quality characteristics,and to determine the relationship between the tocols,protein fractions and other quality characteristics.Ten hard red commercial South African wheat cultivars were analysed over three locations in the Free State production region,which is the largest production area in the country,for tocols,using white flour.
