Effects of Dehulling Process on Deoxynivalenol and Zearalenone Levels in Wheat
Contamination of cereal grains by molds and mycotoxins are unavoidable and constitute a significant hazard in the food chain.Several toxigenic fungi are found in nature but three important genera-Aspergillus,Penicillum and Fusarium,produce extremely toxic fungal compounds.While Aspergillus and Penicillum spp.are known to be post-harvest contaminants,Fusarium species are both pre-harvest contaminants and plant pathogens.
