ANALYSIS OF CONVECTIVE DRYING OF BASIL LEAVES
The effects of leaf size and air temperature on the drying kinetic curves of basil leaves have been investigated for cross-flow convective drying in a 10 cm diameter drying cell.The size of leaves was varied by working with whole,half-sized and quarter-sized cut leaves (yielding to size ratios ranging from 4.2 to 7.8).The air temperature varied from 30 to 60 oC.For the cell diameter tested,the kinetic curves of whole leaves were not reproducible.The time required to reduce the moisture content of cut leaves was strongly affected by the temperature and packing structure.Experimental curves of moisture content over time were fitted to empirical equations to describe drying kinetics.Only the four-parameter Midilli and Kucuk model provided a satisfactory fitting.
