DRYING KINTETICS OF CODFISH IN THE PRESENCE OF HIGH INTENISTY AIRBORNE ULTRASOUND

A hybrid drying system for high intensity airborne ultrasound applied in convective drying was developed and the influence on codfish drying was investigated. The semi-empirical Weibull model was used to model and investigate the drying process. The drying time can be decreased by 25% due to the ultrasound, while the drying rate is increased by over 40%.Airborne ultrasound increased the drying rate, especially in the beginning of the drying, while towards the end the effect was diminished but still visible.A thermal effect was documented for the experiments with ultrasound, which might (at least partially) explain the higher diffusion in ultrasonic drying.High intensity airborne ultrasound shows great potential to increase convective drying rates while decreasing the drying time, and not only for codfish.
