MICROWAVE DRYING:CHALENGES AND OPPORTUNITIES

  This paper reviews the major challenges and barriers in microwave drying categorized into: (1) Technical issues such as electric discharge,impedance mismatch,limited penetration depth,short life time of magnetrons,low power from a single magnetron,and non-uniform power distribution,(2) Non-technical issues exemplified by thermal runaway,differential heating,edge and corner overheating,melting in freeze drying,and (3) Research-related issues such as determination of incident power,calibration of the magnetron,continuous vs.intermittent irradiation,and targeted application of MW in hybrid technologies.Barriers to the successful adoption of microwave processing are pointed out along with opportunities for improved process to overcoming the obstacles and open new application areas.
