?Microwave drying characteristics and dried quality for wild rice stem

  Little detailed information is available on microwave drying characteristics of wild rice stem and alternative of using varying microwave power drying on food products.This study focuses on describing microwave drying characteristics of wild rice stem and discussing the effect of sample thickness,drying power and mass.The quadratic orthogonal regression experiment was conducted,and models for effect former drying load-power,latter drying load-power and former drying time on sensory quality,rehydration ratio and energy consumption rate were established.The results show that the two falling rate periods during microwave drying on wild rice stem,and the first falling rate period being over moisture of 1.1 (dry basic,d.b.) and the same water loss will consume more energy when the moisture content is less than 1.1 (d.b.).The three factor effect significantly four indices.It is not significant for the effect of interaction among the three parameters on sensory quality and energy consumption rate.The interaction effect of former drying load-power×latter drying load-power on dehydration ratio and latter drying load-power×former drying time on rehydration ratio are significant.For four indices,drying parameter optimizing combination is different.Former drying load-power is higher for energy consumption rate and rehydration ratio.Latter drying load-power should be lower for rehydration ratio and sensory quality,higher for energy consumption rate and dehydration ratio.Former drying time should be shorter for sensory quality and dehydration ratio,also short for energy consumption rate.
