INFLUENCE OF CONVECTIVE - MICROWAVE DRYING ON SHRINKAGE OF CARROTS

  In this work,convective-microwave drying of carrot was investigated.Drying experiments were performed at different microwave power levels (100,200 and 300W) combined with air temperatures (30,40 and 50 o C).Mathematical models were proposed,correlating the shrinkage coefficient with the moisture content,power microwave and air temperature.The linear model showed best results.The higher condition (50 oC and 300W) provides lower moisture content and more pronounced shrinkage than lower condition (30 oC and 100W).In addition,increases the drying rates and reduces the drying times.Among the three models proposed,the Midilli model precisely represented the convective-microwave drying behavior.
