THE APPLICATION OF SCANNING ELECTRON MICROSCOPE (SEM) TO STUDY THE MICROSTRUCTURE CHANGES IN THE FIELD OF AGRICULTURAL PRODUCTS DEHYDRATION

  It is a common sense that the change of macroscopic properties of material is caused by the changes of its microstructure.The microstructure of fresh and dried samples can provide a powerful tool and strong evidence for analyzing the properties changes of the samples during drying process.In this paper the authors through concrete examples to introduce the main content and conclusions of the microstructure investigation in the field of agricultural product dehydration and analysis the causes behind the microstructure change phenomenon through specific case.At last the authors point out the future research directions in this field.
