NUMERICAL ANALYSIS OF DRYING KINETICS FOR SHRINKABLE PRODUCTS LIKE FRUITS AND VEGETABLES

  The aim of this paper is to develop a mathematical model of drying kinetics applicable for different drying methods.It is developed on the basis of balance equations and thermodynamics of irreversible processes that assure well physical definition of the model coefficients.This model enables numerical computation both the drying curves and the temperatures of dried bodies for drying processes as a whole.In this paper The experimental validation of the presented model is carried out on the example of convective drying of shrinkable products like fruits and vegetables.A satisfactory adherence of the kinetic curves determined numerically with those experimental ones makes the basis for numerical calculation of the net energy consumed for drying.Such a nicely formulated drying kinetics offers the basis for construction of energy efficient drying processes due to their optimization with respect to drying time and energy consumption.
