A NOVEL METHOD FOR MEASURING THE MOISTURE DISTRIBUTION WITHIN SPAGHETTI DURING ITS REHYDRATION

  A novel method (digital imaging profile method: abbreviated DIP method) was developed using a high-resolution digital camera to characterize the rehydration process of dried spaghetti.The DIP method is based on the color alteration of spaghetti with the moisture content.Compared with other method such as magnetic resonance imaging,the advantages of the DIP method are higher space resolution,monitoring the lower moisture content and shorter measurement time.We revealed,for the first time,the whole moisture distribution of dried spaghetti of al dente.
