CFD SIMULATION OF MEAT DRYING
Preliminary results of the numeric simulation of a drying chamber for meat products in semi industrial scale is presented in the paper.This work focuses on the study of air distribution inside the drying chamber for cured meat products,such as sausages or ham.Air is the factor that can affect significantly the drying of a foodstuff.During the drying of sausage products,it has been empirically observed that the differences in the movement and speed of air,affect the quality of the product.CFD simulation reduce the costs of the experiments and allow to verify the known process parameters,distribution of air inside the chamber for different speed ranges and determine construction improvements.
