CHARACTERISING THE STRUCTURE OF TAURINE PARTICLES CRYSTALLISATION VIA CONVECTIVE DRYING

  Taurine,an amino acid that provides physiological benefits for the human body,naturally crystallizes as needles,which do not flow easily.The ability to manipulate size and shape of spray-dried taurine particles is desirable to improve their quality and properties for good fluidity and anti-caking behaviour.In this work,the single droplet drying technique was used to monitor changes in the droplet temperature and mass of taurine during convective drying,in which crystallisation occurred.Fractal Dimension (df) was used to quantify the ruggedness of crystallising particles,and thus investigate their crystallization behaviour at different drying temperatures.The results showed that as drying temperature increased; lower values of dF were obtained,indicating less rugged particles.This suggested that the rate of moisture removal influenced the crystal formation.The preliminary findings from single droplet drying experiments under controlled conditions provided drying kinetics data in relation to the crystallization process for taurine particles.In addition,perimeter-based fractal dimension can be used as a way to quantify the irregular structures of taurine crystals.
