MICROENCAPSULATION OF MCT OIL IN BLENDS OF MODIFIED STARCHES AT HIGH-OIL-LOAD

  High-oil(fat)-load powders are common materials in many food industries,but cause significant technical problems during industrial scale production in the spray drying process.In this study,the effect of OSA starch on the microencapsulation of mediumchain triglycerides (MCT oil) during spray drying for production of oil-rich powders was investigated.Solid content was prepared at 10 wt% with 1,2,3 and 4 times of MCT oil to the starch.The optimum MCT oil loading was found to be at 3 times of oil loading with higher encapsulation ratio and moderately low surface oil.The observation of the internal morphology by SEM confirmed the presence of vacuoles in the spray-dried particles.
