DRYING RATES AND DESORPTION ISOTHERMS OF AMORPHOUS SUGAR SOLUTIONS CONTAINING CRYSTALLINE MATERIALS

  When a salt (NaCl or KCl) is added to a sugar solution (sucrose or maltodextrin),the equilibrium water content increased especially in the range of water activity,aw >0.6.The desorption isotherms were well described over a wide range of aw (0.1 < aw < 0.9) by the Ross method.A remarkable solid phase or crystal was not observed when the ratio of the salt to the total solid is below 0.3.The isothermal drying rate of a salt-sugar mixture solution increased with increasing the salt content.The increase of the drying rate was more significant with KCl.
