DYNAMIC VACUUM DRYING PROCESS FOR VISCOUS AND STICKY PRODUCTS

  A set-up for dynamic vacuum drying of sticky and viscous materials in foamed state was developed and tested.A commercially available horizontal-mixer was utilized as vacuum dryer.The mixer was equipped with a ploughshare-type mixing geometry and mechanical knife-chopper for later material disintegration.All experiments were done with aqueous carbohydrate mixtures with defined viscosity based on glucose syrup or sucrose.In order to obtain stable aerated matters small amounts of whey-protein-isolate (1-4 %) were added.First the heat transfer through the drying vessel with and without agitation was investigated.Secondly the drying process itself was optimized with respect to changing material properties.To get better insight into the drying mechanism compressive tests on aerated products with various porosities and moisture contents were performed.Besides improving the drying efficiency the aim of this work was the gain maximum yield of free flowing powder.
