DRYING AND EXTRACTION PROCESS OF LEMONGRASS (Cymbopogon citratus)

  In this work,studies were conducted to show the effect of different conditions in the drying process on the amount and quality of extract of Cymbopogon citrates.The drying kinetics of lemongrass were found to be greatly affected by the air temperature and surface area during drying.A higher amount of extract of lemongrass could clearly be collected with the lower drying temperatures (40,and 60 °C) and samples of 2 cm2.The other conditions reduced the antioxidant activity of the dried lemongrass when compared to fresh lemongrass.The experimental values of the antioxidant activity (DPPH method) were 87.29 % and 63.6 % for the extract by hydrodistillation and alcohol-distillation respectively.In general,the statistic analysis of drying results showed significant effect (α<0.05) on extraction degree of lemongrass.
