DRYING IN SUB-SAHARAN AFRICA:TECHNICAL,ENERGY,ENVIRONMENTAL,ECONOMIC AND SOCIAL ASPECTS.
Drying in sub-Saharan zone is a major issue in rural areas to avoid product losses and enhance food conservation for personal consumption or local trade.It has also been an important topic for researchers over the past forty years: many dryers have been designed,tested and optimized by universities and research organizations.In the present work,we proposed to analyze different aspects of actual drying in African sub-Saharan zone with respect to the types of crops,the aims of drying,the drying technologies,the energy and also environmental,economic and social issues related to the drying activity.We exposed the dryer’s situation in Africa.Several dryers available in the literature and on the field were considered.The criteria are proposed and discussed.Review show that solar energy and gas are the main energy sources with free and more rarely forced convection.
