EFFECT OF MANNITOL ON FORMATION OF HOLLOW PARTICLES IN THE SPRAY-DRIED POWDERS OF ENCAPSULATED EMULSIFIED d-LIMONENE IN GUM ARABIC AND MALTODEXTRIN
Confocal laser scanning microscopy (CLSM) is a helpful means for characterization of internal structure of spray-dried particles.The effect of addition of mannitol on the formation of hollow particles in the spray-dried powders of emulsified d-limonene encapsulated within the combination matrix of gum arabic and maltodextrin was investigated by CLSM.The spray-dried powders were prepared by using an Ohkawara-L8 spray dryer equipped with a centrifugal atomizer.The internal and external morphology of the spray-dried powders were analyzed as a function of the operating conditions of the spray-dryer by CLSM and scanning electron microscopy (SEM).Addition of mannitol reduced the proportion of hollow particle presumably by its rapid crystallization during the spray drying process.
