PERFORMANCE EVALUATION OF TOP-SPRAY FLUIDIZED BED COATING SYSTEM FOR PRODUCING TURMERIC EXTRACT COATED RICE
Inlet air velocity and atomization air pressure are important parameters to performance of top-spray fluidized bed coating (TSFBC).Therefore,the objective of this study was to investigate the effects of inlet air velocities and atomization air pressures on the performance of batch top-spray fluidized bed coating for producing turmeric extract coated rice (TECR).The performance of TSFBC was evaluated in terms of TECR qualities,coating efficiency and energy consumption.It was found that both inlet air velocity and atomization air pressure had significant effect on the final moisture content of TECR but did not affect the number of fissured kernels and head coated rice yield.Operating at low inlet air velocity of 2 m/s provided the low coating efficiency of TSFBC,more number of uncoated white rice and low redness (a*) value of TECR.The increase of atomization air pressure improved the coating efficiency,but the percentage of uncoated white rice was still high.When the inlet air velocity was increased to 2.5 or 3 m/s,the coating efficiency of TSFBC was higher than 80%.At inlet air velocity of 2.5 and 3 m/s the atomization air pressure did not significantly affect the coating efficiency.The total specific energy consumption of TSFBC was in the range of 0.57-0.59 MJ/kg TECR.
