DHA MICROENCAPSULATION & DROPLET DRYING BEHAVIOUR

  Productions of poly-unsaturated fatty acids in omega-3 series have attracted the attention of functional food industries due to their benefits to human health.An example is the docosahexaenoic acid (DHA) adopted in this study.Here,DHA was microencapsulated with emulsified-starch to decrease its oxidation,improve stability during storage,and mask unpleasant odor.A glass-filament single-droplet drying approach was utilized to yield accurate kinetics data of encapsulated fish-oil containing 40% DHA from the emulsion droplet during a thermal drying process.The Reaction Engineering Approach (REA) was used to obtain the drying model from experimental data in the form of the master activation-energy curve.This curve provides a good description of drying behavior,while also produces an accurate prediction of drying kinetics.The use of the single-droplet drying rig was extended to observe the dissolution behavior of the dried particle.Based on dissolution and wetting phenomena observed,the crust formations during and after the drying of emulsion droplet were studied.
