MAXIMIZING THE RETENTION OF GANODERIC ACIDS AND WATER-SOLUBLE POLYSACCHARIDES CONTENT OF GANODERMA LUCIDUMSLICES USING TWO-STAGE DEHYDRATION METHOD

  Ganoderic acids and water soluble polysaccharide are the main bioactive ingredients of Ganoderma lucidum which have been found to give therapeutic effects in various kind of diseases.However,they are sensitive to heat and tend to degrade in large amount during heat treatment process such as drying.Hence,it is crucial to apply a suitable drying method for the drying of G.lucidum to minimize the loss of these bioactive ingredients.Two-stage drying method which involved heat pump drying followed by oven drying was applied to optimize the retention of both crude ganoderic acids and water soluble polysaccharides content in G.lucidum slices,as well as to improve its drying kinetic as compared to single stage drying methods.The application of two-stage drying method shortened the total drying time up to 33.3% with a total of 28.9% higher rate of moisture removal as compared to single-stage drying methods.Drying of Ganoderma slices at 10-minute heat pump drying followed by 50-minute oven drying retained most of the ganoderic acids and water-soluble polysaccharides in the dried products,which recorded to preserve about 80.4% of water-soluble polysaccharides and 11.3% more ganoderic acids than freeze dried slices.The findings in the current works reveals the potential of two-stage drying method which can be applied to maximize the yield of bioactive ingredients at minimum drying duration for the drying of Ganoderma slices.
