EFFECT OF DRYING ON ANTIOXIDANT PROPERTIES OF BLACK SAPOTE (Diospyros digyna Jacq) FRUIT

  Black sapote (Diospyros digyna Jacq.) is an exotic Mexican fruit which is rich in bioactive compounds and it has antioxidant properties that can prevent some diseases.However,fresh black sapote in not available all year around and their shelf life is too short.For this reason,the aim of this study was to evaluate the effect of dehydration on the antioxidant activity and physicochemical properties of the Diospyros digyna Jacq.pulp.The pulp of the fruit was drying by two different temperature of dehydration (40 and 70 °C).Polyphenols,vitamin C,carotenes,DPPH radical scavenging activity and reducing powder was evaluated.Total polyphenols,DPPH radical scavenging activity and reducing powder in dried fruits were higher than in fresh fruit.No significant differences in the chemical properties were found in fresh and dried sapote in both temperatures,instead there was an increase in the antioxidant properties of the dried product,indicating that drying enhances the antioxidant properties of the sapote and when the fresh fruit is unavailable,the dry pulp can be a good resource to replace the fresh fruit.
