EVALUATION OF ALKALINE-IONIZED WATER PRETEATMENT FOR QUALITY OF DRIED APPLE VARIETIES

  The effect of freeze drying with or without alkaline-ionized water pretreatment on apple cubes (Golden D.,Idared) was evaluated.A pretreatment was done by soaking apple varieties in alkaline-ionized water before freeze drying.The products were compared to the samples that did not undergo any pretreatment.It was found that the drying rate of apple samples immersed in alkaline water was increased and the drying period was decreased.The drying data were fitted to the thin-layer model.Third-degree polynomial model was assess using two statistical parameters,R2 and RMSE.In this study,the effects of pretreatment on the physicochemical properties of dried apples,namely,color and hardness were evaluated.
