APPLICATION OF REACTION ENGINEERING APPROACH TO MODEL DRYING KINETICS OF HIGH SOLIDS MILK
This paper presents the thermal-moisture drying history for skim milk droplets of 20 wt.% to 50 wt.% initial solids.Droplet temperature,diameter,and moisture content profiles during drying were directly obtained using a glass filament single droplet drying technique.Reaction Engineering Approach (REA) was applied to establish master activation energy curves for the prediction of drying history of milk droplets.A polynomial fitting equation at the region where moisture content has been reduced (i.e.falling rate drying stage) could be used to describe drying behaviours of skim milk at different initial solids concentration.Experimental validations showed that this approach could be used to predict drying behaviours of higher solids skim milk from the master activation energy curve of lower solids milk.Results from dryer wide simulations using REA parameters obtained from the single droplet drying study are presented here.
