MICROWAVE VACUUM ASSISTED DRYING OF GREEN PEAS USING HEAT PUMP AND FLUIDIZED BED
The aim of this work was to study microwave vacuum assisted drying (MVD) of green peas using fluidized bed and heat pump system.A comperative study of heat pump fluidized bed atmospheric freeze drying (HP FB AFD) and heat pump fluidized bed hot air convective drying (HP FB HACD) was conducted.The drying kinetics and quality of products were studied.The initial drying rates of green peas were 0.04 and 0.12 1/min for HP FB AFD and HP FB HACD,while for MVD and HACD they were 0.59 and 0.20 1/min,respectively.Due to low operational temperature,HP FB AFD preserved sample size with minimal shrinkage (20%) and did not entail the changes in starch granules.Furthermore,the multi-stage combined HP FB AFD+MVD caused small changes in color and created desirable porous inner structure of final products.Summarizing,HP FB AFD+MVD can be promising alternative technique for green peas processing.
