MICROENCAPSULATION OF PEQUI PULP BY SPRAY DRYING

  The objective was to obtain microencapsulated pequi pulp powder through spray drying,using maltodextrin as microencapsulating agent.A central composite rotatable design was used to evaluate the effect of the variables inlet air temperature,maltodextrin and surfactant concentration on the responses process yield,powder hygroscopicity,water activity,vitamin C and total carotenoids,which ranged from 27.4 to 51.7%,9.1 to 12.1g adsorbed moisture/100g dry matter,0.09 to 0.21,129.8 303.0mg/g solids pequi and 8.2 to 94.9mg carotenoids/g solids pequi,respectively.Only vitamin C was influenced by the independent variables.Powder morphology showed variation in size and shape of particles.
