SPRAY DRYING OF BABASSU COCONUT MILK:INFLUENCE OF TEMPERATURE AND MALTODEXTRIN CONCENTRATION ON THE POWDER PROPERTIES

  The objective of this study was to obtain babassu coconut milk powder by spray drying process,with the use of maltodextrin as a carrier agent.A experimental design was carried out to verify the effect of inlet air temperature and maltodextrin concentration on yield process and powder properties.The experimental values of powders hygroscopicity and process yield ranged from 9.2 to 10.3g adsorbed water/100g solids and 26.6% to 34.7%,respectively.The response surfaces showed that the highest yield was obtained at the central point for the maltodextrin concentration.Water activity ranged from 0.05 to 0.12 and lipid oxidation from 0.01 to 0.07 meq peroxide / kg oil.
