ON SPRAY DRYING OF HIGH SOLIDS SKIM MILK:EFFECTS OF FEED SOLID CONTENT ON PARTICLE STRUCTURE AND FUNCTIONALITY

  The effects of precursor conditions and spray drying parameters on the particle properties of the dairy products have been investigated.In this paper,the micro-fluidic-jet spray dryer has been used to fabricate uniform microparticles from the reconstituted skim milk with high feed solid content equivalent to those used in industrial spray dryers,i.e.32.6,41.4 and 53.5 wt% (wet basis).In order to study the materials migration to the surface when forming the droplet and particle,the surface composition of the freeze dried atomized monodisperse droplets and spray dried uniform microparticles have been characterized via an X-ray photoelectron spectroscopy.Field-emission scanning electron microscopy has been used to observe the particle size and morphology.The wettability and solubility of the spray dried samples have been quantified using scaled-down GEA Niro Method.
