EFFECT OF DRYING METHOD ON EQUILIBRIUM MOISTURE CONTENT OF LEMON BALM (MELISSA OFFICINALIS L.)

  The influence of drying technique on moisture sorption properties of lemon balm (Melissa officinalis L.) leaves was investigated at temperatures of 25,50 and 70 °C using the hygrometric method.The equilibrium moisture content of freeze dried leaves was significantly higher than that of vacuum dried and hot-air dried samples.The microstructure of the dried leaves was investigated by a scanning electron microscope.
