EXPLORATION OF THE POSSIBLE CALCIUM ENRICHMENT IN POTENTIAL MICRO-ENCAPSULATION MATERIAL TO IMPROVE CELL VIABILITY
Probiotic has received increasing attention and been widely investigated in the drying field due to the huge commercial value.Reconstituted skim milk (RSM) has been found to be a very effective protectant wall material for micro-encapsulating probiotics in many production processes,in particular spray drying.It’s worth noting that RSM is a Calcium-rich material and Calcium plays a significant role in the heat stability of milk.In this work,we prepared the solutions which were rich of calcium salt (CaCl2) and investigated its protective capacity for the probiotic cells in heat treatment.The result shows that the certain concentration of CaCl2 can maintain the cell viability at a high level after heat treatment.This work provides some important informations which may contribute to the obtaining of high cell viability from spray drying in the near future.
