Correlation of volume fractal dimension inside matrix of plant materials and re-rehydration hydration behavior
This paper studied the relationship between matrix microstructure of plant materials and re-hydration behavior using Astragalus and Chinese Angelica root slices as examples.Based on the measured results by using automatic mercury injection apparatus (at larger scale ≥100nm), the volume fractal dimensions (DV) were estimated to characterize the pore size distribution inside matrix of samples dried by microwave 200W and conventional hot air 60 ℃ .Our results demonstrate that the values of DV are correlated well with re-hydration ratio, and the volume fractal dimension (DV) could give a better understanding the mass transfer behavior inside matrix of plant porous materials.
