Determination of Effective Diffusion Coefficient and Activation Energy of Banana during Drying Process

In this study, first, drying kinetics of banana was modelled and then effective diffusion coefficient and activation energy were determined.For this purpose, the experiments were done at four air temperature levels of (60, 70, 80, 90℃), two air velocity levels of (0.5 and 1 m/s), and two thickness levels of (3 and 5 mm).In drying kinetics modelling, the Midilli et al model due to its R2 (coefficient of determination), RMSE (root mean square error) and SSE (sum square error) factors had the best accordance with the experimental data.Increasing of air temperature was found to increase effective diffusion coefficient.Effective diffusion coefficient increased from 0.357E-07 to 1.305E-07 m2.s-1 and activation energy changed from 34.65 kj.mol-1 to 44.77 kj.mol-1 according to the different conditions tested.
