Evaluation of Flavor Release from Spray-dried Powder under Humidity Ramping by Dynamic Vapor Sorption
The release of d-limonene from spray-dried powders was investigated under a humidity ramping condition at constant temperature using a home-built dynamic vapor sorption (DVS) system.Two spray-dried powders, each prepared at the feed liquid temperature of 40℃ and 80℃, respectively, were studied.Real-time release fluxes of dlimonene from the spray-dried powders could rapidly be evaluated for characterization of the flavor release properties.The flavor fluxes from the powder obtained at 40℃ of feed liquid temperature were generally higher than those from the one obtained at 80℃ for the tested humidity range.
