PRODUCTION OF SUGARCANE JUICE POWDER USING SPRAY DRYING AND VARIOUS ADJUNCTS
In this study, the sugarcane juice was spray-dried under various conditions aiming to determine the proper drying conditions for manufacturing the sugarcane juice powder.Initially, the 30 °Brix sugarcane juice specimens were dried in a small-scale spray dryer at drying air temperature between 130-170℃ using maltodextrin, Arabic gum and dietary fiber as the drying aids.It appeared that the 30 ° Brix sugarcane juice should be added with either maltodextrin at least 15% of the juice weight or Arabic gum at least 10% before drying at 150℃ in order to obtain the fine powder products.Apart from the smallscale spray drying experiments, the sugarcane juice powders were produced using an industrial-scale spray dryer under seven drying conditions.It was found that in order to save energy the fresh sugarcane juice should be concentrated to 30 °Brix prior to adding maltodextrin 30% and drying at 180℃.
