STUDY OF A NEW ADIABALE COATING MATERIAL FOR FRUIT AND VEGETABLE PRODUCTS PRIOR TO HOT AIR DRYING METHOD

Potato and apple were coated with a new coating material alginic and polygalacturonic acid follow by dehydration process under various osmotic conditions using glucose and sucrose as osmotic solutions.The dehydrated materials were then dried.The influences of new compatible coating material on osmotic dehydration and further on convective drying were investigated.Results show that the effect of new coating material on osmotic dehydration during drying was found higher water loss, lower solids gain and increase the drying rate compare to uncoated sample.Comparisons were also carried out between the above two coating material.Sample coated with alginic acid showed the better results compared to sample coated with polygalacturonic acid.
