MAXIMIZING THE RETENTION OF GANODERIC ACIDS AND WATER- WATERSOLUBLE SOLUBLE POLYSACCHARIDES CONTENT OF GANODERMA LUCIDUM USING TWO-STAGE DEHYDRATION METHOD

Ganoderic acids and water-soluble polysaccharides are the main bioactive ingredients of Ganodermalucidumwhich are heat sensitive.Hence,it is crucial to apply a suitable drying method for the drying of G.lucidum to minimize the loss of these bioactive ingredients.In this study, two-stage drying which involved vacuum drying followed by heat pump drying was applied to optimize the retention of both ganoderic acids and water-soluble polysaccharides in G.lucidum fruiting body, as well as to improve its drying kinetics as compared to other single-stage drying methods.The application of two-stage drying method during drying of fruiting bodies successfully reduced 29.3% to 60.98% of total drying time required by single stage vacuum drying method.Vacuum drying of the fruiting bodies for 18 hours followed by 5 hours of heat pump drying showed optimum retention of ganoderic acids and water-soluble polysaccharides, with a total of 9.169 μgganoderic acids / g DM and 0.460 mg water soluble polysaccharides / g DM respectively in the dried products.By this, about 98% retention of water soluble polysaccharides and 4.16% more ganoderic acids content were found in the dried fruiting bodies as compared to freeze dried products.Furthermore, higher ganoderic acids and water soluble polysaccharides content were recorded in the dried products as compared to single-stage and commercial dried fruiting bodies, which were up to 19.7% and 29.4% for the respective active ingredients.
