THE COLOR CHANGE KINETICS OF AMERICAN GINSENG SLICES DURING AIR IMPINGEMENT DRYING
The color change kinetics of American ginseng slices were investigated in an air impingement dryer under different drying temperatrues (35, 45, 55, and 65oC) using the CIE Lab color parameters (L*, a*, b*) as the assessment indicators.Results indicated that all the three color parameters (L*, a*, b*) increased with the drying time during drying process.The L* value decreased with increasing the drying temperatrue.However, the a* and b* value increased with the increase of drying temperature.It indicated that decreasing the drying temperature could improve the color quality.By comparing the fitting of the zero-, first-, and first fraction-order kinetic models to the experimental data, the most suitable model was selected to describe the color change kinetics.Arrhenius equation was used to calculate the change activation energy and it were 33.874~38.550kJ/mol, 56.478 kJ/mol, and 74.033 kJ/mol for L*, a*, and b* values, respectively.
