QUALITIES OF TURMERIC EXTRACT COATED RICE USING TOP-SPRAY FLUIDIZED BED COATING TECHNIQUE
The addition of natural antioxidants onto white rice can improve functionality and nutritional quality.Curcuminoids that present in turmeric rhizome are one type of phenolic compounds and they possess antioxidants.The objective of this study was therefore to investigate the effects of drying temperatures and spray rates of turmeric solution on white rice quality using the batch top-spray fluidized bed coating technique.The experiments were performed by spraying turmeric extract solution with concentration of 4% w/v onto Jasmine white rice at constant atomization pressure of 1.5 bar.The experimental results have shown that the drying temperature and spray rate of coating solution were important parameter that governed the final moisture content of turmeric extract coated rice (TCR).The TCR was almost fissured at the lower moisture content of 11.8 % wet basis.The color of TCR was in reddish-yellow range at the spray rates of 34, 40 and 46 mL/min.Total phenolics content and total antioxidant capacity of TCR were increased with increase in spray rate of coating solution.Drying temperature in a range of 50-60 ℃ insignificantly affected total antioxidant capacity but slightly affected the total phenolics content with lower total phenolics content at higher drying temperature.The coating of turmeric extract did not affect rice texture i.e.hardness and stickiness as compared to that of uncoated rice.
